Baked Barbecue Chicken Legs

When we’re having a bunch of people over for lunch, I like to bake a big batch of barbecued baked chicken legs. They are super easy. First, leave the skin on. Nobody expects a leg to be skinned or boneless, so you’re set there. Next, lightly salt and pepper the chicken, drizzle a little olive oil on the skin and pop in the oven for 30 minutes (turning once after fifteen minutes). Then add a healthy dose of your favorite barbecue sauce and continue baking until the sauce browns, the chicken finishe’s cooking (depending on the size of the legs- this could be 20 to 30 more minutes). After about ten minutes, turn legs and add more sauce. Serve this with some macaroni salad or potato salad, rolls or chips, and you’ve got a super easy meal without spending a fortune.
